I just previewed my site on my iPad (rotated in landscape orientation) and found that the nav menu drops down out of the header and overlays the slider at that screen size. I tested it on my desktop and found that, as I reduce the width of my browser window, the same thing happens when the screen is about 2/3 width. It seems as though the menu should collapse into mobile/hamburger mode before this can happen – it’s a result of the menu running out of space when it bumps into the logo. How can I adjust the responsive settings to prevent this?

You can reduce the padding and margin between the menu items. So they will fit the small width of ipad screen size.
You can change this in Header Options > Menu Options > Menu Items padding.
